Phytosterols appear to reduce cholesterol safely by inhibiting the absorption of dietary cholesterol within the intestines. As the molecular structure of phytosterols is almost indentical to cholesterol, the body is unable to distinguish between the two. As there are limited numbers of receptors for cholesterol attachment and absorption, phytosterols are able to physically block cholesterol and prevent the body from absorbing it.
